Abido Cardamom Whole is premium green cardamom in the pod - the queen of spices, with the eucalyptus-citrus perfume that defines Arabic coffee (qahwa), Lebanese rice, kabsa, biryani, ma'amoul and milk puddings. Abido Spices has been Lebanon's best-known spice house since 1950 - still family-run, grinding and blending at its own ISO 22000-certified factory in Naameh, just south of Beirut.
Crack a pod and the seeds inside are dark, oily and intensely aromatic. A 20g sachet holds roughly 50-60 pods - plenty for weeks of coffee and cooking.
How to use it
- Arabic coffee & tea – Add 2-3 crushed pods per pot of qahwa or karak tea.
- Rice & kabsa – Drop 4-5 pods into the pot with the rice, bay leaf and a cinnamon stick.
- Meat & stock – Boil chicken or lamb with 3 pods, black peppercorns and bay for a clean, fragrant stock.
- Desserts – Crush the seeds into ma'amoul filling, rice pudding or hot milk with honey.
