About this product
Abido Citric Acid is food-grade citric acid (E330) - the 'lemon salt' (hamod el-laymoun / sour salt) that Lebanese and Turkish cooks use for a clean, sharp sourness in hummus, stuffed vine leaves, pickles, soups and sweets when lemons are scarce. Abido Spices has been Lebanon's best-known spice house since 1950 - still family-run, grinding and blending at its own ISO 22000-certified factory in Naameh, just south of Beirut.
A pinch does the work of a whole lemon without adding liquid. Also the baker's secret for a tangy icing, a jam that sets, fizzing sherbet and home-made bath bombs.
How to use it
- Lebanese cooking – 1/4 tsp in hummus, warak enab (vine leaves), fattoush or lentil soup in place of a lemon.
- Pickles (torshi) – 1 tsp per litre of brine keeps turnips and cucumbers crisp and bright.
- Jams & drinks – 1/2 tsp per kg of fruit helps jam set; a pinch sharpens lemonade and jallab.
- Baking & sherbet – Mix 1:1 with bicarbonate and icing sugar for fizzy sherbet; a pinch brightens icing.
