Abido Chicken Shawarma Spices is the complete chicken shawarma seasoning (shawarma dajaj): white pepper, mahlab, cardamom, red pepper, citric acid, garlic, ginger and bay leaf on a salt base, with a touch of sugar and flavour enhancer for that takeaway taste. Abido Spices has been Lebanon's best-known spice house since 1950 - still family-run, grinding and blending at its own ISO 22000-certified factory in Naameh, just south of Beirut.
Because the salt is already in the blend, it is a one-step marinade: mix with yoghurt, lemon and oil, coat chicken thighs, and grill, pan-fry or roast. Serve with toum (garlic sauce), pickles and fries in a wrap.
How to use it
- Chicken shawarma – Marinate 1kg boneless thighs with 1 tbsp spice, 3 tbsp yoghurt, juice of a lemon and 2 tbsp oil for 4+ hours; grill or roast.
- Wraps – Slice, pile into saj or pita with toum, pickles, tomato and fries.
- Tray bake – Toss chicken, potatoes and onions with the marinade; roast at 220C for 30 minutes.
- Skewers – Thread marinated cubes on skewers for a quick shawarma-style kebab.

Yes - it is a complete seasoning with salt, so do not add extra salt to the marinade.
