Abido Red Taouk Spices is the complete seasoning for shish taouk - Lebanon's famous grilled chicken skewers. Paprika, garlic, white pepper, ginger, red chilli and cardamom on a salt-and-citric base give that red, lemony, garlicky crust you get from a Beirut grill. Abido Spices has been Lebanon's best-known spice house since 1950 - still family-run, grinding and blending at its own ISO 22000-certified factory in Naameh, just south of Beirut.
Already seasoned, so it is a one-step marinade: whisk with yoghurt, lemon and oil, coat cubed chicken breast or thigh, marinate, skewer and grill. Serve with toum, pickles and flatbread.
How to use it
- Shish taouk skewers – Marinate 1kg cubed chicken with 1 tbsp spice, 3 tbsp yoghurt, juice of a lemon and 2 tbsp oil for 4+ hours; grill on skewers.
- Oven or air fryer – Spread marinated chicken on a tray; roast at 220C for 18-20 minutes.
- Wraps – Roll grilled taouk in saj or pita with toum, pickles and fries.
- Vegetables & halloumi – Toss with oil and spice before grilling alongside the chicken.
