Abido Sage is whole dried sage leaf (maramieh / meramiyeh) - the aromatic Levantine sage brewed as a soothing tea after meals, added to black tea in Palestinian and Lebanese homes, and used in small doses to season meat, stuffing and butter sauces. Abido Spices has been Lebanon's best-known spice house since 1950 - still family-run, grinding and blending at its own ISO 22000-certified factory in Naameh, just south of Beirut.
Steep a teaspoon of leaves for five minutes for a clear, earthy, mint-camphor infusion that settles the stomach. The foil sachet keeps the leaves fragrant and dry.
How to use it
- Sage tea (maramieh) – Steep 1 tsp leaves in a cup of just-boiled water for 5 minutes; sweeten with honey.
- Sage with black tea – Add a few leaves to the teapot with black tea - the Palestinian way.
- Cooking – Crumble into stuffing, bean soups or brown butter for pasta and gnocchi.
- Roasts – Tuck leaves under chicken skin or over pork before roasting.
