Abido Shawarma Spices is the meat shawarma blend (bhar shawarma lahmeh) used by Lebanese restaurants for lamb and beef: allspice, black pepper, cinnamon, ginger, cardamom, sumac, cloves, nutmeg, citric acid and mahlab. Warm, tangy, deeply aromatic - and no salt or MSG. Abido Spices has been Lebanon's best-known spice house since 1950 - still family-run, grinding and blending at its own ISO 22000-certified factory in Naameh, just south of Beirut.
Slice lamb or beef thinly, marinate overnight in the spice with vinegar, oil and garlic, then griddle or roast and pile into pita with tarator (tahini sauce), pickles and onion-sumac salad. One sachet seasons around 2kg of meat.
How to use it
- Lamb shawarma – Marinate 1kg thinly sliced lamb with 1 tbsp spice, 2 tbsp vinegar, 3 tbsp oil, garlic and salt overnight; griddle in batches.
- Beef shawarma – Same method with flank or sirloin; rest, slice and serve with tarator and pickles.
- Oven tray – Toss sliced meat and onions with the marinade and roast at 220C for 20 minutes.
- Kebab & doner – Season 500g mince with 2 tsp for kafta-style shawarma skewers or home doner.
