Abido Ras El Hanout (Red) is the North African 'head of the shop' blend made the Lebanese way: paprika, coriander, fenugreek, cumin, turmeric, ginger and chilli - warm, earthy, gently hot and brick-red. No salt, no MSG. Abido Spices has been Lebanon's best-known spice house since 1950 - still family-run, grinding and blending at its own ISO 22000-certified factory in Naameh, just south of Beirut.
The one-jar seasoning for lamb and chicken tagines, couscous, harira soup, merguez, roasted vegetables and chickpeas. Bloom it in oil with onion and garlic and the whole kitchen smells of Marrakech.
How to use it
- Tagine – Fry 1 tbsp with onion and garlic, add 500g lamb or chicken, apricots or olives, and simmer.
- Couscous & rice – Stir 1 tsp into the stock before steaming couscous or cooking rice.
- Roast vegetables – Toss squash, carrots, cauliflower or chickpeas in oil and 2 tsp spice; roast at 200C.
- Rubs & merguez – 1 tbsp per 500g lamb mince with garlic and harissa for merguez-style kofta.

Is it hot?
Mildly - there is chilli in the blend, but it is warming rather than fiery.
Red or yellow?
This is the Red variant (paprika-led). Abido also makes a yellow, turmeric-led version.

About 1 tablespoon for 4 servings.
