Abido Barbecue Spices is the Lebanese grill seasoning (bhar el-lahm el-mashwi) - a paprika, garlic, onion and pepper blend built for charcoal: lamb cubes, chicken wings, kafta skewers, burgers and roasted vegetables. Abido Spices has been Lebanon's best-known spice house since 1950 - still family-run, grinding and blending at its own ISO 22000-certified factory in Naameh, just south of Beirut.
Rub it on dry or loosen with olive oil and lemon for a quick marinade. One sachet seasons around 2kg of meat.
How to use it
- Lamb & beef – Rub 1 tbsp per 500g into cubes or chops; rest 30 minutes before grilling.
- Chicken – Mix 1 tbsp with 2 tbsp olive oil and the juice of a lemon; marinate wings or thighs for 2 hours.
- Burgers & kafta – Season 500g mince with 2 tsp plus grated onion and parsley.
- Vegetables – Toss halloumi, peppers, courgette and corn in oil and a teaspoon of spice before grilling.

No - it is savoury and smoky rather than chilli-hot, so it suits the whole family.
Dry rub or marinade?
Both: rub it on dry, or mix with olive oil and lemon juice for a wet marinade.
