About this product
Abido Biryani Spices is a clean six-spice biryani masala - coriander, turmeric, cinnamon, black pepper, cardamom and cloves - the Gulf-and-Levant style used for chicken, lamb and prawn biryani, kabsa-style rice and pilafs. No salt, no MSG, no colouring. Abido Spices has been Lebanon's best-known spice house since 1950 - still family-run, grinding and blending at its own ISO 22000-certified factory in Naameh, just south of Beirut.
Bloom a tablespoon in the oil with onions, add your meat and rice, and the whole pot turns golden and fragrant. One sachet makes several family biryanis.
How to use it
- Chicken biryani – Fry 1 tbsp with onion, garlic and ginger, add 500g chicken, then layer with par-cooked basmati.
- Lamb or prawn – Marinate 500g lamb or prawns with 1 tbsp spice, yoghurt and lemon for 1 hour.
- Kabsa / pilaf – Add 2 tsp to 2 cups of rice with stock, bay leaf and a cinnamon stick.
- Vegetable biryani – Season roasted cauliflower, potato and peas with 1 tbsp before layering.

Is it hot?
No - it is aromatic (cardamom, cinnamon, cloves) rather than hot; add chilli to taste.
Does it contain salt?
No - season your biryani separately.
How much per 500g rice?
1-2 tablespoons, bloomed in oil first for the best flavour.
