About this product
Greenfields Ras El Hanout (“head of the shop”) is a fragrant, warming Moroccan blend of 14 spices – coriander, paprika, turmeric, cinnamon, cumin, ginger, black and white pepper, cayenne, pimento (allspice), cardamom, cloves, nutmeg and aniseed – for a gentle warmth rather than fiery heat. Greenfields is a London-based herbs and spices brand that has supplied quality ingredients since 1982.
The signature seasoning for Moroccan tagines, couscous and pastilla. Rub it over lamb, chicken or roasting vegetables, stir it into soups, stews and chickpeas, or mix it with yoghurt for a quick marinade.
How to use it
- Tagine – Brown lamb or chicken with onion, add 1–2 tablespoons of Ras El Hanout, tomatoes, chickpeas or dried fruit and stock, then simmer slowly until tender.
- Roasted vegetables – Toss a tray of vegetables in olive oil with 2 teaspoons of the blend and roast until caramelised.
- Couscous – Stir a teaspoon into the hot stock or butter before adding the couscous.
