Greenfields Falafel Spice 50g

Greenfields Falafel Spice is a warm, aromatic Middle Eastern ten-spice blend of coriander, cumin, garlic, turmeric, caraway and a gentle touch of chilli, rounded off with fennel, nutmeg, cloves and cardamom – everything you need to season homemade falafel. Greenfields is a London-based herbs and spices brand that has supplied quality ingredients since 1982.

Mix it into soaked chickpeas or broad beans for crisp, golden falafel, stir it through fritter batter, or combine it with olive oil and lemon juice as a marinade for vegetables, halloumi or tofu. It also makes a quick rub for chicken or lamb.

How to use it

• Classic falafel – Blitz 250g soaked (uncooked) chickpeas with a small onion, garlic, fresh parsley and 1–2 tablespoons of Falafel Spice. Shape into balls and fry or bake until golden.
• Marinade – Mix 1 tablespoon with 2 tablespoons olive oil and the juice of half a lemon. Coat vegetables, halloumi or tofu, then roast or grill.
• Rub – Sprinkle over chicken or lamb before grilling or roasting. The blend contains salt, so taste before adding more.
