Greenfields Dried Black Lime (Loomi) 55g

Greenfields Dried Black Lime are whole limes that have been boiled in salted water and sun-dried until black and hard, giving a tangy, smoky and slightly sweet citrus flavour. Greenfields is a London-based herbs and spices brand that has supplied quality ingredients since 1982.

Pierce or crack them and add to slow-cooked stews, soups, rice and kabsa, or grind them to add citrus depth to sauces, rubs and marinades.

How to use it

• Stews – Pierce 2–3 limes with a knife and simmer them in the stew (such as ghormeh sabzi); press them to release the juices and remove before serving.
• Kabsa & machboos – Add a whole pierced lime to the rice and spice stock.
• Ground – Crack open, remove the seeds and grind to a powder for rubs and dressings.

Black limes are dried for longer than pale dried limes, giving a darker, smokier flavour.
