Greenfields Bullet Chilli are small, bright red whole dried chillies with a fiery, punchy heat – also known as bird’s eye or Thai chilli. Greenfields is a London-based herbs and spices brand that has supplied quality ingredients since 1982.
Fry them whole in hot oil to temper dals and curries, add them to stir-fries and marinades, or crush them for homemade chilli flakes.
How to use it
- Tadka (tempering) – Fry 2–3 chillies in hot oil or ghee with cumin seeds and garlic, then pour over dal.
- Stir-fries – Add whole chillies to the hot wok with garlic and ginger; remove before serving for less heat.
- Homemade chilli flakes – Crush or blitz the dried chillies just before use.
