Greenfields Biryani Masala is a fragrant spice blend made to make biryani quicker and easier – coriander, cumin, fennel, chilli, mango, fenugreek, mustard, turmeric, black pepper, garlic, red bell pepper, cinnamon, cloves, ginger, star anise and bay leaves, for a soft, aromatic heat that lifts rice and meat dishes. Greenfields is a London-based herbs and spices brand that has supplied quality ingredients since 1982.

Use it to layer flavour into chicken, lamb, beef, fish or vegetable biryani, mix it with yoghurt as a marinade, or add it to soups and roasted vegetables.

How to use it

• Chicken biryani – Marinate 500g chicken in yoghurt with 2 tablespoons of Biryani Masala for an hour. Cook with fried onions and tomatoes, layer with par-boiled basmati rice and steam on a low heat until tender.
• Vegetable biryani – Fry onions, add 1–2 tablespoons of the masala and mixed vegetables, then layer with rice and steam.
• Marinade – Mix with yoghurt, lemon juice and garlic for grilled meat, fish or paneer.
