Mushy peas, pea and ham soup, pease pudding, Black Country grey peas and bacon, or roasted for a crunchy snack.

How to cook
- Soaking – Soak 8–12 hours (overnight) – add a teaspoon of bicarbonate of soda for softer mushy peas, then rinse
- Cooking – Simmer 20–40 minutes until soft and breaking down
- Quantity – Keep peas covered by 5cm of water
- Tip – Add salt, a knob of butter and a little sugar at the end for chip-shop-style mushy peas.
