Citric Acid is a crystalline food acid often known as “lemon salt” or “sour salt”. It adds a clean, sour note without liquid and helps balance sweetness.
Use a pinch in place of lemon juice, in jams and preserves, homemade cordials, sherbet and sweets, pickles, and to stop cut fruit from browning.

How to use it
- Lemon substitute – Start with a small pinch dissolved in a little water – it is much stronger than lemon juice.
- Jams & preserves – Add a little to sweet or low-acid fruit – follow your recipe.
- Drinks & sherbet – Dissolve with sugar for cordials, or mix with icing sugar for sherbet.
