LEEN Dates Paste is a smooth, ready-to-use paste made from 100% pitted, pressed Saudi dates by Aliat Taibah Factory for Dates in Al-Madinah Al-Munawwarah – dense, dark and naturally sweet with a rich caramel note. Nothing is added: no sugar, syrup, oil, colour or preservative.

How to use it

• Taste & texture – Dense, smooth, dark-brown paste with a rich, caramel-like date sweetness.
• Baking – The classic filling for maamoul, date rolls, kleicha, date squares and bars – use straight from the pouch, or warm gently with a little butter or ghee and a pinch of cinnamon or cardamom for a softer filling. Swap for sugar roughly 1:1 by weight in cakes, muffins, flapjacks and cookies, cutting other liquid slightly.
• Everyday – Energy balls, protein balls and no-bake bars; stirred into porridge, yoghurt and smoothies; spread on toast; or blended 2:1 with water for a quick date syrup. Sweetens tagines, chutneys, barbecue sauces and dressings.
• Occasions – Ramadan and Eid baking, iftar sweets and stuffed dates, bake sales, meal prep and everyday sweetening.

Good to know

Does it contain stones?

No – the dates are pitted and pressed into a smooth paste. As with any natural date product, the very occasional fragment can occur, so please check when preparing.

How do I use it for maamoul?

Warm it gently with a little butter or ghee and a pinch of cinnamon or cardamom, roll into small balls and wrap in the semolina dough.

Can I use it instead of sugar?

Yes – replace sugar roughly 1:1 by weight and reduce other liquid slightly; it also adds moisture and a caramel note.

How should I store it?

In a cool, dry place away from sunlight. Once opened, reseal or transfer to an airtight container and refrigerate; it can also be frozen in portions.
