Abido Vanilla is the Lebanese baker's vanilla: a fine vanilla-flavoured sugar (vanillin powder) that goes straight into cake batter, ma'amoul, sfouf, biscuits, custard, rice pudding, mouhalabieh and sweet drinks - with no alcohol, unlike liquid extract. Abido Spices has been Lebanon's best-known spice house since 1950 - still family-run, grinding and blending at its own ISO 22000-certified factory in Naameh, just south of Beirut.
A teaspoon flavours a standard cake. The 50g foil sachet is the equivalent of six supermarket vanilla-sugar sachets and keeps for years.
How to use it
- Cakes & biscuits – 1 tsp per 200g flour, sifted in with the dry ingredients.
- Puddings – 1/2 tsp in rice pudding, mouhalabieh, custard or sahlab.
- Ma'amoul & sfouf – Add 1 tsp to the semolina dough with mahlab or anise.
- Drinks – A pinch in hot milk, milkshakes or Arabic coffee.

No - it is vanilla-flavoured sugar (vanillin), the standard baking vanilla across the Middle East, and much cheaper than pods.
