Tahina (Tahini) is a smooth paste of ground sesame seeds with a rich, nutty flavour. It is a staple of Middle Eastern cooking and, after chickpeas, the key ingredient in hummus.
Blend it into hummus and baba ghanoush, whisk it with lemon juice, garlic and water into a creamy tahini sauce for falafel, shawarma and salads, drizzle it over roasted vegetables, or stir it into dressings, cookies and other bakes.

Ways to use tahina
- Hummus – Blend a 400g tin of drained chickpeas with 2–3 tbsp tahina, the juice of 1 lemon, 1 small garlic clove, a pinch of salt and a splash of cold water until smooth.
- Tahini sauce – Whisk 3 tbsp tahina with the juice of half a lemon, a little crushed garlic and salt. It thickens at first – keep adding cold water a spoonful at a time until smooth and pourable. Serve with falafel, shawarma, grilled meat or fish, and salads.
- Baba ghanoush – Mash smoky roasted aubergine with tahina, lemon juice, garlic and a drizzle of olive oil.
- With date syrup – Swirl tahina into date syrup (dibs) for a classic sweet dip with warm bread.
- Dressings & baking – Whisk into salad dressings, drizzle over roasted vegetables, or stir into cookies, brownies and banana bread.
- Tip – Natural oil separation is normal – stir the oil back in before use.

Why is there oil on the top?
The sesame oil naturally rises to the top over time. This is normal – just stir it back in before use.
Should I keep it in the fridge once opened?
Advice varies between makers, so please follow the instructions on the jar. Chilled tahina is thicker – let it come to room temperature and stir.
How do I make tahini sauce smooth?
Add lemon juice first, then cold water a spoonful at a time while whisking. It looks thick and grainy at first, then turns smooth and creamy.
