Al’Ard Crushed Green Freekeh is green wheat harvested young, while it is still green, then flame-roasted, rubbed, dried and crushed – the traditional way freekeh is made in Palestine. Roasting gives it its typical smoky flavour.
Use it in place of rice or bulgur: in pilafs and stuffings, soups and stews, warm grain bowls and salads, or as a side dish for chicken, lamb and roasted vegetables.

How to cook (general guide)
- Rinse – Give the freekeh a quick rinse in a sieve (optional).
- Simmer – Use roughly 2½ cups of water or stock per cup of freekeh. Bring to the boil, cover and simmer gently for about 15–20 minutes, until tender.
- Rest – Take off the heat, leave covered for 5 minutes, then fluff with a fork and season.
- Note – Cooking times vary with the grain size – the instructions on the pack come first.
